1/3cupsunflower seed butter,or another natural nut or seed butter.
1/3cupmaple syrup
1/4cupmini chocolate chips
3/4tsppink salt(add an extra ¼ tsp for a slightly saltier flavour)
Instructions
Line a metal baking sheet or tray with parchment paper.
In a medium bowl, combine the oats, ground flaxseed, and salt.
Add the sunflower seed butter and maple syrup. Stir, pressing the mixture together until a cohesive dough forms. If needed, add more quick oats, 1 tablespoon at a time.
Fold in the chocolate chips.
Scoop about 1 tablespoon of dough, roll into a ball, and gently flatten into a cookie shape. Place on the prepared tray.
Refrigerate for about 30 minutes to firm up before serving.
Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
