A rich, silky chocolate mousse made with simple ingredients and naturally sweetened with dates and maple syrup. Perfect for meal prep, this wholesome treat doubles as a satisfying snack or dessert.
1/4cup+ 2 tsp Dandy Blend(optional, for a deeper chocolate flavour)
3tbspmaple syrup
1/4tspsalt
*Soak cashews overnight or in hot water for 4 hours.
Instructions
Make the cashew cream. Blend the soaked cashews, water, dates, and vanilla until smooth. If using cashew milk, blend it with the dates and vanilla instead.
Add the cacao powder, Dandy Blend, maple syrup, salt, and chia seeds. Blend on low for 30 seconds, then high for 3 minutes.
Transfer to an airtight container or individual jars. Refrigerate for at least 2 hours until set.
Stir before serving. Refrigerate for up to 5 days or freeze for up to 3 months.
Ash's Tips
The 3 cups of premade unsweetened cashew milk are a substitute for the soaked cashews and water.
Using a high-speed blender may warm the mixture. This is normal and may help the mousse thicken more quickly.
If the surface darkens after blending, simply stir before serving.
